My son just signed up with EveryPlate to get 3 meals a week. OK fine. He's not here this weekend but I thought I'd prepare one today. Creamy Dijon Chicken. Sounds good, quick and easy.

Peel and dice potatoes into 1/2 inch pieces. Somehow I managed to cut my finger with a vegetable peeler. Band-Aid #1. Trim and halve zucchini, slice crosswise into 1/2 inch thick half moons. Trim and finely chop scallions, separating whites from greens. Peel and finely chop garlic cloves. These new kitchen knives I ordered are really sharp. Band-Aid #2. And I think more garlic pieces ended up on my tennis shoes than the cutting board, those little suckers fly all over the place.

I'm an hour into this and still on Step 1.

Sorry about the misfortunes. Try DoorDash. I use it a good bit nowadays. Much safer.

Maybe look at Factor meals, its 2min in the microwave. Lot less bandaids, lot safer for those knife challenged, and sounds like it would free up some time.

Just reminder: remove fork from venting film prior to microwaving. Doesn't sound like this kitchen thing is your specialty!

time complaining about it. Good news is that I had to preheat the oven to 450 for the potato and zucchini chunks, and I burned my fingers taking it out. Pretty sure it cauterized the cuts.

Best part was the sauce to top the chicken. Scallions, garlic, sour cream, garlic, butter, etc. I guess I'm just not cut out for kitchen cooking. Put me on on a grill and I'm the master. I'll do the best ribeye this side of Morton's... medium rare with a good char.

BTW, they also left out the 3 vodka cranberries that are essential for the meal prep.
