My favorite breakfast sandwich is a BLT w/egg on a hamburger bun. A few weeks ago I had a pork belly BLT on light toast....holy crap I could've eaten 3 of em!

I like pork stuffed with pork and wrapped in bacon. In this case that is a pork tenderloin stuffed with sausage and wrapped in bacon. Family favorite.

Thompson's Market in Saluda, N.C. where they package it up themselves in thick slices, which fry with little leftover grease. If there on visits, I typically will buy four to six packages, one pound each, plus several of their one-pound, homemade, sage sausage, which makes for delicious biscuits or burgers. (The adjacent cafe serves up the same sausage burgers.)
Then, on trips to visit family on the south Texas Gulf Coast, I'm usually in the Palacios-Blessing area and like to have breakfasts at the Blessing Hotel, owned by my family. The manager, whom I've known for 50 years, will serve me three or four eggs fried, grits, homemade biscuits and a side plate filled with thick bacon slices fried to perfection...she knows I like bacon, and I have no choice on the quantities! lol

This smoked bacon wrapped meatloaf I do is the stuff that dreams are made of. Sometimes I’ll surround it on the smoker with potatoes then make mashed potatoes out of them as the side dish. Only make it 1-2 times per year, figure any more than that and I’ll make it to an early grave!

I LOVE bacon but a BLT and at breakfast is about all I want. Do not care for it on my sub sandwiches such as a club at Jersey Mike’s or hamburgers. Very strange.
