I get a rotisserie chicken from my local artisan grocer called Lowe’s, pick the meat and stick the skin and bones in a spaghetti pot. Add two quarters of chicken stock from the box, and two quarts of water. Put on the stove and let it simmer on low heat for about an hour or two, or longer.
Strain the broth, put it in the fridge and let it cool. When it’s cooled, skim off the fat and set aside.
Two carrots, two or three celery stalks, an onion, finely dice all to the same size. Peel and dice a buttload of garlic cloves & thumb of ginger. Make a bouquet garni of loads of fresh thyme, parsley stalks, and bay leaves. Sauté the veg in a big knob of butter. Salt, heavy black pepper. Add the garlic and ginger. When it’s soft, deglaze the pan with a glass of white wine. Tonight I’m drinking a Sav blanc from Bordeaux, so it’ll be that, but it really doesn’t matter what it is. Higher acid the better. Toss in the stock, the herbs, and bring to a simmer. Add the pulled chicken. Cook it down for a couple minutes, then add in a package of egg noodles. Take out the bouquet garni. Season with the juice of a lemon, add salt if needed. I add a couple dashes of fish sauce for some umami. Top with fresh chopped parsley and a drizzle of the good olive oil.
I’m serving it tonight with a big sourdough that I’ll crisp up in the oven, and mixing up a stick of softened butter with a touch of honey & some flaky salt.

It was a great dishwasher.
I think teh quality of most dishwashers has improved in teh last few years though.

opinion. I made some ahi tuna steaks marinated in soy/honey/probablysomeotherstuff last Friday and kinda forgot about them, and was gonna make leftover tacos for lunch or dinner one day. That day probably needs to be today since I'm at like 5 days now. Was thinking some kind of Asian cabbage/slaw, but I don't have cabbage on hand. What do? How do I Asian fish taco without going to the store?
