I thought I'd share my favorite catfish stew recipe with the crowd. I swear it kept me alive one winter morn deep in a cypress swamp north of Santee just above I-95 waiting on the woodies and teal.

I usually double or triple it to make a big pot to have leftovers. Best part is it freezes amazing and I actually think it tastes better after thawing. Of course being an ice cube myself at 4am may have had something to do with that opinion 😉

If we could get the world leaders to all sit down together with a pot of this stew, there would be world peace within an hour. My recipe is almost identical. Thanks for posting, it will make lots of people happy when they try it.

Tried and true. For a good change of pace, use cooter in place of catfish.

That looks a lot like what's been handed down in our family. I like it much better with Crappie or Sheepshead fillets instead of catfish. Rimini can be a tough place with the right kind of bad weather.

The Pee Dee River for ages.

Render 1 lb of fatback

Add a bunch of diced potatoes to the renderings, let them absorb the fatback grease, snack on the fatback

Add 5 lbs catfish, let cook until done

Add 84 oz diced tomatoes, onions and bell peppers if you wish

Let simmer 2-3 hrs to allow flavors to meld

It's dang good. The fatback is the base that makes it

the fish has moisture in it as well. Then when you add the tomatoes, you get the rest. Water dilutes flavor

I was born in Hartsville so the Pee Dee rivers were a common fishing ground growing up. The recipe I use (my dad's) is similar but there are no potatoes. At times we served it over rice and at times just stew. I've never deviated from his recipe as it's a combination of flavors and memories.
