Anyone know why we are using only one Camera on the softball and baseball people and no graphics?

Try working in an understaffed college athletics program, much less Clemson, and you'll understand.

The conference mandates that the athletic department has to stream the game. They can't mandate that you run a scoreboard, have multiple camera angles, have commentary, etc.
