Hamburger Seasoning

Am going to grill some killer hamburgers on charcoal tomorrow night. Normally use Kosher salt, ground pepper and a smidge of garlic. Looking to try something different...what's your favorite?

Yes at the very end of the cook and I've closed off the air vents. Melt cheese to fast, it makes it oily!!!

grind yer own meat. Srsly, that chit in the store, there ain't no way to know how long that stuff has been on the shelf cause it's been treated with some crap to remove oxygen from the package and keep it bright red looking, and whether it's been a day or three...it matters in taste and texture.
Buy yerself a fat chuck roast and run it through your grinder, sometimes I'll grind some rib meat or brisket in with it if I'm feeling bad@ss. Now it's about the process. Patty them quickly, thick or thin doesn't matter (your choice), and put them in the fridge in a single layer, uncovered for about an hour. I use a baking sheet to do this, cuz it fits on my fridge racks. You want the exterior of the patty to be dry af so it can form a bit of a crust when it hits the grill.
Grill temp depends on how thick you've made the patties; I'm a middle of the road kinda guy, not too thick not too thin, so I usually get the grill between 500° and 600°. Right before they go on the grill, I hit'em with salt and a bunch of ground pepper(it helps create the crust and doesn't overpower the beef taste). If you salt the burger earlier and let it sit, it breaks up the proteins on the outside and you get a rubbery exterior...which is groce. So salt at the VERY last minute before it goes on the grill. You can add whatever spices you want, but garlic and/or onion burns on direct heat and gets bitter. If I add anything other than salt/pepper, it's usually chipotle powder for some kick.
So, if you want a really killer burger...do yer own grinding. It changed my life, man.

I'll be honest, I haven't found nothing better than chopping up raw bacon in very small pieces and add it to each patty as I make them, then I will sprinkle on a very small amount of the grill mate of choice, and salt and pepper. Cook on top rake of the grill.
With my grill, I can crank the char coals to the top right under the bottom rack, or crank them down to the bottom. Using the top rack for burgers/dogs, I will crank the coals almost to the middle to prevent fires from the burger and bacon grease. I also have wooden wedges that I will soak in a bucket of water, and I use the wedges to keep the grill top open a few inches to let the most of the smoke out of the grill so that I don't taste all that grease smoke on my burgers or dogs. All that grill smoke will give me the worst case of heart burn I've ever had, and being without a gall bladder don't help any either. Every body that has ate my grilled burgers will say that they are the best tasting that they have ever eat, but each to their own....

Lipton onion soup mix packet, whole packet per pound for heavy flavor and at least 10 point increase in BP due to salt content, or half it if your trying to avoid a stroke like my old asse. Also brioche bun, gotta do the brioche bun and if you like blue cheese, mix some in butter and neufchatel cheese melt in microwave a little and then put on top last 3-5 mins while on the grill....That way if the stroke doesn't get you the clogged arteries will

The montreal seasoning is good. I add a little xtra kosher salt, some Wooster and some A1, along with a small amount of FINELY chopped onions. And use some beef with some fat content. I mix some 80% in with some ground sirloin.

or better. Sautee fresh garlin and a little finely chopped onion a little fresh basil or what ever else green you have. Maybe add a little finely chopped peppers or mushrooms. Mix together wih meat and crumbled blue cheese. Add a little crushed black pepper and sea salt.
Use a lot of coals never use lighter fluid. Soak apple wood chips for no more than 20 minutes. Throw the chips on the coals and cook the burgers medium. Toast the buns and eat

Salt, pepper, dash of fish sauce, and a heaping teaspoon of mayo. I know that sounds insane but it’s a thing. Mayo seals in moisture and makes the outsides crisp nicely, and the fish sauce adds an umami hit without the salt bomb of pure soy sauce. Try it sometime. Go medium rare to medium on that and top with some lettuce, tomato, and your favorite burger sauce..... oh man!

Before cooking on each side:
* A liberal dose of soy sauce * Sprinkle Montreal Steak Seasoning * Small sprinkle of Lawry's Garlic Salt
Sear each side on a very hot fire, then finish in a pan or on a platter on the cold side of the grill until ready.
