with zero inventory at dealerships. I won't miss having to deal with a car salesman but I do like to test drive a vehicle before I buy it - zero inventory at the dealer kind of throws a wrench into that....

They will. They are called 'mannequins' and they are dealer stock they can't sell for XX amount of days. Even though all Lightnings are sold for years, many dealers got one mannequin for test drive purposes.

Ford and their dealers are at war with each other. Dealers with insane mark ups have caused Ford to sell less vehicles than they could have, dropping stock prices, etc.
