How long will it take to smoke a 10.5……..

pound pork shoulder at 225 degrees? Googling it gives you answers anywhere from 8 hours to 20 hours. Any of you guys and gals want to share your knowledge and experience?

That big at constant 225 you will need every bit of 12 hours and maybe more.

I did 2 9lbs shoulders on the 4th at 250, took 9 hrs , then wrapped and left in a cooler for at least 4 more, turned out great.Throw some Meat Church honey hog and honey hog hot on them before smoking, Money!

I usually do around 8 lbs and it takes about 12. Don't forget to let it rest for an hour once you reach your desired temperature it's a very important step to get that tenderness we are all looking for.

13 hours is what I do. 4-6 on smoker then

wrap in foil and do seven more in the oven.

If the bone will pull out clean, you know you’re ready to go.

I would plan for about 16 hours. I usually cook a bone in shoulder to around 204 degrees internal temperature.

I’d go 250. Pork is so fatty, you’ll be fine at 250.

Pull around 200 to 203 internal. Rest in cooler for at least an hour before actually pulling the meat.

Probably 15-16ish hours. Roughly 90 minutes per pound of meat usually gives a good estimate.

Like some others have said too you can go up to like 140-145ish on the smoker then wrap and finish her in the oven too if you want. Outside of some purists with truly talented palates not many would ever know the difference.

after the meat gets to about 140 degrees it won't absorb any more smoke so I take it out and put it in the oven at 225 for another 4 hours. I see no difference in the depth of the smoke "ring" since trying that. Saves me alot of wood pellets in my Treager smoker.

Forget 225. Go to 325 and use a thermometer until you reach 170 degrees. Turn it off and let it cool.

Woof I hope you aren't the grill master in your family. 170 is an awful temp to pull pork. Too hot for tenderloin or roasts, too low for shoulder or ribs. You'd be kicked to dishwashing duties only for a suggestion like that around here.

Makes a big difference if you start with almost room temp meat or refrigerator cold meat. That changes cooking time by 2-3hrs.

I always start mine up higher 250-275 with lot of smoke to get some bark started for 2hrs, then drop to 225 for 6-8hrs. If it looks to be getting dry, wrap in foil. You should be able to wiggle the bone and tell if its ready. Pull it from heat and let it rest in foil for an hr or so.

I usually inject mine with apple juice, little apple cider vinegar and garlic powder, then a real light rub. I always make my own vinegar based sauce.

Thanks! I have an internal probe meat thermometer but it is not wireless. I may look at purchasing one of these.

The pencil thermometer has to be close to the wooden box, and the wooden box is connected to the wifi.

Then you can watch it on your phone while sitting in front of the TV in the AC.

To be honest it will vary some depending on the shoulder itself and the smoker. Does the temp sway a lot or is it constant. Typically when I smoke one of that size it usually takes between 12 and 14 hours then add a minimum of 2 hours wrapped in foil then 2 towels stuffed in a cooler.

Deshaun & Trevor could slow smoke a Chicken to death in like two hours and 15 minutes at between 65-85 degree’s. ( they said “never again” but it Was better than Kentucky fried)

They would turn the heat up early and often, Mike Williams put them in a spinning air fryer too!

Torching them is the best way with the new Air Raid system fryer!

Let’s cook some Devils in Jesus name to get this year started right.

It’s amazing how it goes when start getting the devils out of the way and send them packing in Durham right from the beginning.

An hour a lb, but you could easily speed that up by doing it at 275. It won’t take anything away from the end product. Use a water pan and spray it with apple juice once or twice during the cook.
