I'd never heard of Shakshuka until you posted about it the other day. Went to googling and thot man that looks good, I can make that. So yesterday I did.

Twas DEEEE-LISSH!

Made a modified half recipe:
1 large onion
1 green bell pepper
2 oversized spoonfuls of garlic
fair amount of paprika, crushed red peppers, kosher salt, y cumin
*Cooked all of this down for maybe 5-10 min in a small Dutch Oven

Added 3 big 'ole maters, diced. And a half can of mater sawce. Covered y simmered for about 15 min.

Removed cover and dumped copious amounts of feta in there. Stirred to combine, let simmer uncovered for another 5-10 min to let it thicken.

Added 3 eggs, covered, let her simmer for another 12 min or so.

Removed lid and added mint y parsley to garnish.

Boy thatshit was good, son. Gracias, will make again.

Oh....and several hours later I took a tdrake. Sweatergahd I smelled mint coming up tween me legs. That was different and I have to admit a bit pleasant. The end.

being that it's I suppose a dish with N. African origins.

What I saw did call for corriander and I dint have that, so maybe that was the miss.

Seemed like it should call for allspice or something, not that I'm in love with that stuff.

The mint was ok, but sorta weird IMO.

I'd LOVE to make an italian version of this. It did taste a bit like lasagna to me.

Any time I cook something tomato-based, I throw in a dash of sugar to cut through the acidity.

It wouldn't be hard to make it Italian or Mexican by mixing up the herbs and spices. Pretty versatile. Now I wanna try that...
