I really don't understand why teams and coaches don't take this approach more.
For example, take a coach like Brent Venables for example. He's set to make $7.25m a year under his current contract.
If Oklahoma had offered him a contract paying him $3mil for 0-3 wins (a $3mil floor) and $1mil per win for each win 4-15, why would he not take that? He has a shot at doubling his market value if he wins it all.
Why would a school not be willing to offer it? If he wins less than 8 then they pay less than market. If he wins 8 then they pay right at market. If he wins 9 or more they pay more than market but are having successful seasons. 15 wins? Pay the man 15 mil, you just won a national championship and went undefeated.
It blows my mind that a school has not stolen a coach with such a lucrative structured deal.

For the same reason that players don't sign deals on pay for performance. Like Dabo, they have incentives in their contract that if they meet certain milestones they will get a bonus, but they are guaranteed a certain amount of money per year regardless of performance or injuries. There's too much risk with pay for performance, one key injury can cost you millions and it's completely out of your control. The risk vs reward isn't even close.

That would be better for the schools, but coaching contracts are one-sided.

It’s why we see buyouts favor coaches, not schools.
If you look at most of these huge contracts in the last 5 years, there are more questionable ones than good ones.
Of the top 10 highest paid coaches, which ones are earning their current contracts?
1. Nick Saban 2. Dabo Swinney 3. Kirby Smart 4. Ryan Day 5. Mel Tucker 6. Lincoln Riley 7. Brian Kelly 8. Jimbo Fisher 9. Mark Stoops 10. Josh Heupel
Not even half are worth what they are currently getting paid.

I did read recently that Sam Pittman at Arkansas has a clause in his contract such that his buyout is $15.75 million if he's above .500 but drops to $10.5 million if he goes under .500.

Yep. A contract that would pay $1 million base and rest be performance dependent. Cap out at maybe $16 million for winning Natty.
